For acceleration I would suggest Bobyck or Simpson take some beating.

In terms of building up speed gradually I think Dutiaume is worth a shout. When he picked up the puck behind his own goal and built up a head of steam nobody was going to stop him skating into the oppositions defensive zone. He'd even manage 4 laps of the oppositions net before any of our players arrived.
